Chicago gut health coach Becca Sweetland has made it her mission to help her followers find the best way to enjoy life even while experiencing digestion issues, such as SIBO or IBS. Sweetland shared her simple to make summer pasta recipe that everyone can enjoy. Feel free to switch out the meat to a different protein of your choice!
I pound Ground turkey
2 Tablespoons of olive oil
1 Yellow squash, diced
1 Zucchini, diced
1 Red bell pepper, diced
Half a box of brown rice pasta (pasta style of your choice)
Parmesan cheese (can be grated or shredded)
Seasoning: parsley, basil, thyme, rosemary, oregano (dried or fresh, if fresh be sure to finely dice) to taste
Salt and pepper to taste
Bring water to boil with a dash of salt. Once water is boiling, cook pasta until al dente. While pasta is cooking, cook ground turkey.
Drizzle olive oil in a large pan and cook ground turkey until there is no pink left. Add zucchini, squash and pepper to the same pan and cook until the vegetables are tender.
Add in all seasonings one at a time and ensure it matches your preference. Finish and serve with parmesan topping!
