Sweet potato tacos

If you’re back to commuting to an office and looking for easy-to-make meals for lunch, try this flavor-packed taco recipe. Sweet potatoes are nutrient dense vegetables rich in vitamin C, A, and B6. It’s also high in antioxidants and a low FODMAP food. Just remember to keep the ingredients in separate containers so they stay fresh!


  • Low FODMAP tortillas

  • Lime wedges

  • 6 ounces peeled sweet potatoes, cut into cubes

  • 6 ounces peeled white potatoes, cut into cubes

  • 1/4 cup vegetable oil

  • 3/4 teaspoon cumin

  • 1/2 teaspoon oregano

  • 1/4 teaspoon chipotle chile powder

  • 1/8 teaspoon cayenne

  • Salt

  • Pepper

  • 2/3 cup lactose free plain yogurt

  • 4 ounces avocado

  • 1 tablespoon lime juice

  • 2 tablespoons water

  • Salt


  1. Preheat the oven to 400º. In a bowl, toss together both kinds of potatoes with vegetable oil, cumin, oregano, chipotle chile powder, cayenne, salt, and pepper. Place the mixture on a rimmed baking sheet, in a single layer. Bake the potatoes for about 40 minutes or until tender.

  2. While the potatoes are baking; place yogurt, avocado and lime juice into a blender and blend until smooth. Add water to make smoother if necessary. Season with salt and pepper

  3. When there are 5 minutes left for potatoes, place tortillas on another baking sheet and insert into oven to let them warm for 5 mins.

  4. After time on oven is done, take out potatoes and tortillas. Place tortillas on plate and fill with potatoes mixture. Drizzle with avocado lime crema. When you’re bring it to work, make sure to take in separate containers!
