Farmer Cheese is a low-fat, low-calorie cultured cheese that makes a great low-lactose alternative to standard pasta cheeses.
- 3 cups cooked fettuccine
- 1½ cup fresh baby spinach
- 1 cup Lifeway Farmer Cheese
- ½ cup grated Parmesan cheese
- ½ teaspoon of thyme
- 1/4 cup extra virgin olive oil
- 1 teaspoon capers
- 1/2 tsp lemon juice
- salt and pepper to taste
Toss cooked pasta with farmer cheese, Parmesan, spinach, herbs, and the lemon dressing.
Top with fresh basil leaves and lemon zest.
